Jersey A5 Cows - The Highest Quality Milk
The process begins with producing the freshest ice cream in small batches from the highest quality Jersey A5 cows and shipping it directly to your door. We selected Jersey A5 cows due to the notably higher fat content compared to normal cows, which gives the milk a richer, creamier texture, translating directly to the creaminess of our ice cream. Fat carries flavor well, so the high-fat content in Jersey A5 amplifies the natural taste of milk, resulting in a richer and more flavorful ice cream.
The Jersey A5 cow primarily produces milk with A2 beta-casein protein rather than the A1 found in other breeds, leading to an easier-to-digest ice that reduces the chances for issues such as bloating or discomfort post-consumption. This is a clear benefit to consumers looking for a natural alternative that is gentler on the stomach. The milk contains higher levels of essential nutrients such as calcium and protein, resulting in an ice cream that not only tastes better but has nutritional value. Once our premium Jersey A5 cows have been milked, the ice cream-making process immediately takes place to ensure the freshest possible product. The result is an ice cream that captures the rich, creamy flavor and quality you would expect at a Michelin-star restaurant.
Step #1: Blending The Milk & Sugar for a Creamy and Sweet Base
The process begins by combining freshly milked Jersey A5 milk with sugar, creating a smooth, naturally sweetened base. The high-quality milk, due to the higher fat content, creates a rich flavor profile, ideal for our ice cream.
Step #2: Pasteurization - A Gentle Heating to Perfection
Next, the mixture is gently pasteurized to eliminate impurities while preserving the natural richness of the milk. Sugar is added before pasteurization because heating the mixture with sugar already dissolved helps the sugar fully integrate with the dairy proteins and fat. This also creates a slight caramelization effect, where the milk and sugar flavors meld more deeply, creating an added richness.
Step #3: Homogenization - Ensuring a Smooth, Even Flavor
The critical factor for the best ice cream is an even distribution of the fat particles throughout the ice cream, ensuring a silky, consistent texture throughout each serving.
Step #4: Flash Freezing & Packaging
Finally, the ice cream is flash-frozen to lock in the fresh, creamy texture saved for your countertop. The most important piece in the flavor and texture profile of ice cream is ensuring the ice crystals are as small as possible when you eat it. We save the “making” of the ice cream to your countertop. With traditional ice cream, the product is frozen using a standard freezing process, meaning ice crystals become significantly larger by the time the product makes its way to the shelf.
